Recipes: Healthy Red Pasta Sauce with Vegetables

Winter Health Veggie Pasta Sauce

The healthful, immunity-building ingredients in this hearty sauce will leave you feeling good from the tip of your tongue and all through your body—perfect for flu season, but tasty all year round! Since the base is a jar of prepared spaghetti sauce, you can be flexible in the additions: include extra vegetables or fewer, fresh herbs or none, dependent upon availability and taste preferences. You can also add ground beef or turkey, but use extra lean.

  • 1 Tbsp olive oil
  • 1 small onion, chopped
  • 6 cloves of garlic (or to taste), pressed or finely chopped
  • 1 red pepper, chopped
  • Mushrooms (enough for 1 cup sliced)
  • 2 fresh tomatoes, diced
  • 1 large jar of quality spaghetti sauce
  • 1 zucchini, shredded
  • Fresh herbs if available, like rosemary or basil

In a medium saucepan, sauté onion and garlic in olive oil just till almost tender. Reduce heat to medium, add red pepper and stir for about 2 minutes. Add mushroom, tomatoes, and spaghetti sauce. Stir. Shred zucchini into sauce. Simmer for 20-30 minutes. Serve over pasta, preferably whole wheat pasta.
